After boiling outside on the fire its time to head in and finish off the syrup on the stove. We take the boiled down sap water and boil for another hour or two inside until the sap  reaches 219 degrees on the candy thomemeter. Now we are ready for our last filtering and bottling in to jars....

After collecting the sap we filter and cook the sap until it is a beautiful golden color and has changed from the sap water to a heavier consistency and starts to linger on a spoon.
